2 lbs. ground sirloin
1 box rice penne
1 jar of organic spaghetti sauce, preferably sugar free
1 Vidalia onion chopped
8 cloves fresh garlic, minced
3/4 box grape tomatoes, halved
16 oz. mozzarella cheese
Extra Virgin Olive Oil
Cook penne, al dente, then rinse with cold water, toss with extra virgin olive oil and set aside. Preheat oven to 350 degrees.
Over medium to medium-high heat, brown sirloin with chopped onion. Drain excess juices. Return pan to heat and add garlic, then spaghetti sauce. Mix meat sauce with penne. Grease, 9x13 baking dish. Pour meat sauce and pasta mixture into pan and sprinkle evenly with Italian seasoning. Place tomatoes in a single layer on top. Cover with mozzarella cheese. Bake about 45 minutes or until cheese is browned.
